The veg has been dried before it’s pickled, so it’s…. Thicker? Denser??? Idk. It just has this SUPER incredible crunch. Not crisp at all like a rice crispy or a fresh veg

No, I literally don’t know how to describe it! I feel like western food never achieves this texture! It’s SUPER crunchy, but…… dull? That’s not right but I’m grasping for words I don’t have! It’s a p common Japanese pickle texture, but good, wrinkly-looking takuan is the best for it.

I think they kind of genuinely can’t empathize with someone having a trait that is outside of the mainstream default, especially since it’s not particularly visible in this case. Like, they *know* I’m mixed race in their head, but they can’t know it in their hearts.
