You made a wise choice, in my opinion! (Especially given all you did *plus* making us a special gluten-free batch of your super yummy creamed corn spoon bread!) So no need to feel guilty!

(But if you want to practice pie baking, I’ve attached a photo of my Grampa Palmer’s pie crust recipe!)
Handwritten pie crust recipe on a pre-printed recipe card. The recipe is the one perfected by Albert Palmer over the course of the 30+ years he ran Palmer’s Diner in Baldwinsville, NY. This was written out by one of his daughters, Bonnie. It is enough enough to make 3 double-crust pies if rolled out correctly. He used vegetable shortening in place of lard in later years. It’s estimated that between the Diner & his volunteer baking efforts that Al Palmer made an estimated 300,000 pies in his lifetime. There is cartoon image of a child carrying a large slice of cake with ice cream scoops stacked on top on a plate and a gray tabby cat is looking at the plate. There is also a Bible verse from Proverbs printed at the bottom of the card.
