And now, starting from the béchamel sauce (30oz milk, 10 tbsp butter, 10 tbsp flour; 3:1:1 ratio) it's time for the cheese; 1 cup sharp white cheddar, 1 cup fontina, 2 cups smoked gouda, and 3 cups yellow cheddar. Get your cheeses from Watonga, Oklahoma. They're the best!

First béchamel sauce I've ever made where I didn't hate how it turned out. Smells amazing.

For anyone who wants (and my own future reference)
6 tbsp of butter
6 tbsp of flour
1 sprig of rosemary
1/2 a palm of fresh ground fennel
12 oz of whole milk; added 4 oz at a time

I have gotten considerably faster at making eggnog; though having a hand mixer helped considerably.

Last year, doing this all by hand took over 2 hours. This year, the whole thing took about 30 - 40 minutes.

But there you have it; homemade eggnog. Let baking season begin!

The oldest theater in my hometown is showing the new Deadpool and Wolverine movie, and this is how they are presenting it on their marquee. The entire city is ablaze with it, and apparently they have been sold out almost every night.
