I've also been looking for one on a Black Friday deal. I'm leaning towards a Huion Kamvas 13 Gen 3 currently. All the reviews I saw were positive and it's a pretty reasonable price

You should be able to use the generated UVs in Cycles like you can any attribute data as long as you set the output attributes correctly.
(Though I don't have experience in using it with baking)
