Even under the Castle Doctrine, force against law enforcement is not a protected self-defense action unless the officer is using unlawful excessive force and you honestly reasonably believe deadly force is necessary to prevent imminent death or great bodily harm (an extremely high legal standard).

That's a certain death situation as they will perceive you as an immediate threat. Survive the encounter first, document whatever you can, then leverage the legal system while it still functions.
