What you’re describing is saddistic and an indictment on the business owners who don’t deserve to run a business.

It’s always cheaper to keep good workers you have and give them raises than to re-train new workers all over again without knowing the end result. They know that. Call their bluff.

My experience with working in a cafe and the food industry (which, admittedly, was 20+ years ago) was the opposite: very irregular performance reviews that you had to push for because they usually led to raises. Albeit, $.25/hr raises, but still.

If you worked there for five years and were still making minimum wage, I don’t think the problem was (only) the lack of tipping, but asshole bosses who didn’t pay you what you deserve for your skill set.
