Oh my goodness, i had thought this one stalled out at 1.000 SG, but in the sux months i was letting it clear it actually went all the way down to 0.990. That's a dry mead! That changes my plans for it, I'll bottle carbonate this one. That's why it never hurts to check!

It's transfer day for these two. They've clarified well but I want to get them off their yeast cakes and get some oak into them. I'm very pleased with the difference in color between them as well, but I haven't yet checked to see how the color translates to taste

So SG is indeed continuing to drop slowly, it was at 1.000 after spinning the bubbles off (but they reformed and pushed it up before I could get a picture). Long ferments are good so I'm not complaining; it tastes really clean so far

The five gallons are apparently happy enough to just keep on going. I may be missing something here, this is my first time using a STA-1 yeast, but that shouldn't have mattered since honey isn't a complex starch. Wild. I'll get a gravity reading Saturday

I made a 5 gallon batch of mead to use with the keg 👀 It's currently gone from 1.100 to 1.004 SG in the bucket, it may drop more while waiting for it to clear. Once it's clear, into the keg! The five gallon carboy is still busy, so individual gallon carboys it is

I also got a 20 liter barrel! That'll be exciting to use, as it infuses the meat the mead will also infuse it, bringing forth the character into subsequent batches. But, the downside is it will have only a limited number of uses

Before I forget to post it (again) I did a bit of checking on the in-progress meads this weekend. The herbal infusion was ready to bottle and two moved in to glass but the big bucket is still under active fermentation and the wineberry still needs more time on the oak
