I've got a Louisiana Grill 7-series. Great big cabinet smoker. Makes it almost too easy. At some point, I'll weld up a trailer smoker. I've got a plan in my head that can fill up about 20' of trailer. I can roll up on a picket line and feed everyone, or feed a town after a tornado.

Yeah I always go dry. People can add whatever flavor of sauce they want. They're just so damn tasty straight out of the smoker. I was in a hurry this time so I only smoked them for 3h, and then wrapped and rushed them to the finish.
