The creature she is accompanied with is based on a depiction of the White Tiger from the Kitora Tumulus. A statue based on this depiction was notably also installed at Chōgosonshi Temple, which is the irl basis for the Myōren Temple.

The unnamed red demon from earlier night parade scrolls, that Sekien appears to have based the Chirizuka Kaio off of, was already depicted alongside Tsukumogami. So i'd wager that it was just included in the Hyakki Tsurezure Bukuro for that reason, with Sekien giving it with a name and description.

Foxes and snakes were also associated with each-other via agriculture, hence why Ugajin features commonly alongside Dakiniten, so I would figure that has something to do with Dakiniten's iconography featuring snakes.

another variant of this story also describes Ame-no-Sagume as an earthly god (despite her name indicating her as being "of heaven"), hence why ZUN presented being both a heavenly and earthly god in Touhou (and why she only has one wing).

Sagume's ability, essentially causing her to jinx any events she talkes about, serves as a fun reflection of Ame-no-Sagume's appearance in the Nihon Shoki. Whereby her attempt to warn Ame-no-Wakahiko ultimately wound up getting him killed in ironic fashion.

There’s also much debate over what, if anything, the Taotie motif itself is supposed to represent. The forms it appears in are also far too varied to represent something as concrete as the mythological Taotie.

and the earlier Lüshi Chunqiu (吕氏春秋; “Master Lü’s Spring and Autumn Annals”) states that the image of the Taotie was attached to bronze vessels.
However Lu Dalin is the most influential to the modern identification of the Taotie with the motif.

Brief addendum, the association of the mythical Taotie with bronze vessels didn't originate with Lu Dalin, Guo Pu had already associated the Paoxiao (and by extension the Taotie) with bronze vessels in his commentary on the Shanhaijing...

As a bonus, the mention of Nuo exorcism actually brings up another member of the Four Perils, the Qiongqi (窮奇), who was invoked as one of twelve apotropaic creatures in the Great Exorcism ceremony. Furthermore the deity of Nuo rituals (儺神, Nuoshen) is also known as Qiongqi (窮奇).
