Yea it's a bit annoying when you're about to get the shot and your pokemon just start running away. I've found small-ish areas work better. Less room for them to wander off.

If you change the music in photo mode the Pokemon does different poses & emotes

I literally had the same thing.
The pokemon included in this game are so good

This game really is such a lovable pay off for those games.
