Project #2 of my knitting journey: decided to try a Sophie scarf!
I don't know if it's the sort of thing I'll really wear (the Sophie hood is more my speed) but it's a good challenge for me and it's fun! Messed up a bit around the blue stitch marker but I think I recovered fairly well :)
The start of a knit scarf in green yarn - the widest part of the scarf is attached to a knitting needle and it gradually gets narrower as it goes to the tip of the scarf. The scarf also has 5 stitch markers on it indicating every time the scarf increases in width by one stitch. One of the markers is blue, the other four are orange.

Took another 1/4 to make a favorite from the RPL meal plan! (sauteed the beans w/ za'atar to top a flatbread along w/ an herb salad & pesto)

Made the full pound of mayocoba beans that came in the shipment. Took 1/4 of the batch and made a bean spread for a flatbread with asparagus ribbons for lunch (recipe from Love&Lemons). Good but wouldn't go through the effort of ribboning asparagus again. Maybe zucchini??

First up I used half of the red lentil bag to make a lemony lentil dish! (as suggested in the accompanying newsletter) Topped with tzatziki bc I didn't have plain yogurt to make my own sauce lol

I present…. Reverse icebox cake! Found thin crispy vanilla cookies at Trader Joe’s & made a chocolate whipped cream. Def over whipped it (or maybe the cocoa affected the texture) but it tastes pretty good 🤷🏼‍♀️

I’ve been busier than I expected this week & not cooking as much as I’d like, but I did roast the beets to make a beet hummus!

Used the baby spinach to make a salad
