I’m a little discouraged, this is my worst batch of croissants to date. Second bake on new oven. Don’t think they proofed enough. Tried different types of flour and butter. I think messed with too many things. Small batch croissants are extremely difficult.

WELCOME TO BLACK HISTORY MONTH
Got a new oven so having to learn how it behaves to adjust bake times. While this Dutch baby is golden brown it was a little under cooked.
Given current egg prices this cost about $2.67, not including the other ingredients.
