still working on my NEPA-style fried Sicilian pizza. 68% hydration, the bottom is fried in the pan with peanut oil on a pizza steel, crushed tomatoes, finely sliced onions, and topped with white cheddar. it's not exactly where I want it to be yet, but getting closer.

as a former radio/TV IT engineer, I can tell you broadcast automation systems can be nightmares that will take years off your life
