Not taco salad, but nacho salad! A layer of warm nachos on butter lettuce, topped with a mix of tomato, red onion, bell pepper, and habanero quick pickled with salt and lime. Plus, of course, avocado and sour cream. Lots of salty crunchy sour spicy sweet all going on together. 10/10 will make again!

2 cups diced or sliced red onion
2 minced habaneros (to taste)
1/2 tsp Mexican oregano
1 tsp olive oil
Enough lime juice to fill jar
Shake well every hour and let sit 2-4 hours, until onions turn bright pink. Store in fridge.
