Something I have tried in a capstone course is entering "✓" grades at various points (✓+, ✓, ✓-, or 0 for no submission) w/points attached to each one to show progress toward the standard. These points are ultimately unweighted at the end of the term when the grade conference overrides them, though.

Yes! The funny thing is that most of the time (with me, at least) the final grade ends up being the same or close to the placeholder grade that's already in the gradebook!
