I don't know what all you have coming with your saddle but a full set of coat straps and a surcingle was standard issue as was a crupper.

They are comfortable. I built a replica of a M1858 from a M1904 tree about 30 years ago. Sold it to a reenactor who becane a Western author.

What made you decide upon a McClellan saddle? Will you be reenactung?

If the polyps recur, talk to your ent about prescribing Dupixent.
I've had 4 polyp surgeries and still could not smell long term.
After starting Dupixent, my sense of smell has returned and stayed for 3 years so far.
