That makes sense now that you mention it. One reason that reference stuck out to me was because it felt out of place when I read it, but I wasn’t thinking of the older usage of “corn”

Correct! The Silmarillion confirms that corn was brought by the Númenóreans. (I don’t remember if the origin story of potatoes is mentioned explicitly)
