Several years of chilli growing, forst attempt at fermented sauce.
Used a lot of chillis, low volune output. Tastes good though.
A word of advice... don't do early morning. Can't taste anything else all day.

* Feed starter well.
* Overnight sponge
_*Knead in bread maker*_ (not a cheat, just simple).
* Prove, set, cook
(I think the 1st is key, but breadmaker helps)
