Bread experiment. A quarter each by weight of four different flours: emmer, rye, strong white, and wholemeal together with malted wheat flakes, barley flakes, sunflower seeds, millet and oats. All from Shipton Mill. It’s delicious.

My favourite Japanese cleaver got a chip. 40 minutes‘ hard but gentle work with the grindstones and it’s very very sharp again. The best knife for vegetable preparation I’ve ever had
