I should note that sadly it came a few months too late for my nephew George who was laid off from his job and lost his health ins. He had type 1 diabetes and couldn’t afford his insulin. He died 2 mos later. He was 21yo.

Pizza night! 72hr dough. 50% @cairnspringmill organic whole grain express bread flour & Molino Paolo Mariani semolina. Plus sourdough discard and a poolish. Baked on a baking steel w/ so many cheeses, UAV mozz, provolone, a little sharp cheddar, pecorino romano & ricotta salata. #NoFlop
