Quinces are one of those forgotten fruits, considered difficult to work with today because they require cooking. This is a shame because they have a mild, sweet flavor, not too tangy, and a texture similar to pears.

Curious to see how your early modern marmalade will work out. Keep us posted!
Today, Sid and I are attempting a recipe for “roy marmelaede” with quinces from the Antwerp Annunciates’ recipe book (first half 17th century, with some later additions - @kbrbe.bsky.social).

Excited to start my paleography course tomorrow at the Regional Archive Alkmaar @archiefalkmaar.bsky.social Picked up a few books to acquaint myself with the Dutch language back when it still had a case system.
