Starting with Christmas/Kiritimati Island, learned some facts about the island and made coconut macaroons (recipe in back of book).

Oatmeal raisin cookies, recipe from the back of a bag of Sunmaid organic raisins. They are soooo good.

I cut the sugar it called for in half, and used my new favorite gluten-free oats from Costco.

Word of the day is 'latibulate' (17th century): to hide in a corner in an attempt to escape reality.
