I would think that drainage is still important in the soil around, so water don’t enter and drown the worms. There should also still be some air circulation to secure aerobic conditions. The worms don’t like anaerobic conditions. But maybe not packing the kitchen scraps is enough?

How does air get circulated? Or is it anaerobic composting?

Are you then pollinating them by hand? I have some heirloom leeks that could be fun to take seeds from next year.
