Short ribs are not my favorite cut to use. The bone gives a nice flavor but it’s too fussy with too little payoff. I’d rather use a chuck roast.

Grits are an easy quick sub for mashed potatoes.
Ina Garten’s Braised Short Rib recipe on Blue Cheese Grits. With some steamed broccoli because you should eat your veggies.
