To me (not well informed), anchor dragging seems to be a very unintelligent way to sabotage seafloor infrastructure. Isn’t there a smarter way to destroy a cable, without having to drag an anchor of several tonnes? Maybe just drag a much lighter hook-kinda-thing, specially made for such operations?

Never. I’ve allways been riding a sport/tourer. I am new to all-road riding since last may. I did some TET in the Netherlands, and try to do as much dirt as possible. Starting next year I want to do a lot of adventure travelling.
