I washed and packed the seeds for passing out to parents on Halloween. Also included were red hybrid jabuticaba seeds.

Everyone seemed pretty excited about the seeds. ❤️😊 We didn’t have many trick or treaters but I managed to give away all but three bags.

Jams and pastes

Made a quick jam of guava paste, yuzu pulp and vegan cream cheese to stuff into jackfruit leaf sweet rolls.

The bread dough had jackfruit leaf powder mixed in so they appear green. Jackfruit leaf baked at a low temp gives the dough a pandan-flavor.

Juice and pulp for vegan yuzu posset.

I used coconut cream instead of heavy cream and also added some yuzu pulp for texture. It was really good.

I used some of the yuzu peel to make gin from plants I grow.

Eastern red cedar is fairly sweet so I chose aromatics that would compliment it.

Dried peels.

I dried the rest of the peels at 150F/65C. It still has quite a bit of flavedo after micro-planing

I plan to use this is in tea, as well as grinding up to use in cooking/baking.

3/ I use yuzucello for baking/cooking in place of mirin, wine/vinegar.

Below I tossed apples with yuzucello and vanilla paste. The alcohol bled into the apples and you couldn’t tell the boundary between apple and citrus.

Used very high pectin Arkansas black apples, which retain shape in baking.

I grated the peels with a microplane to make yuzucello. I used 75% everclear and I let it seep for a week before straining and adding simple syrup.

Yuzucello does not taste like limoncello. It tastes more like orange blossom water with sweet orange juice.

Disease/pest resistant, cold hardy citrus (to zone 7b). All parts of the fruit are edible.

Yuzus like well draining soil but will grow well in pots if local soil is too heavy.

Not a true cherry, but looks just like it.

Almost everbearing in summer. The taste of the fruit depends on the cultivar. Acerolas are naturally mildly-pleasantly tart but mine are a sweet variety.
