I will say that roadkill is a bit different, from a butchering/food safety perspective, as the impact can damage the meat or make things more complicated and the timing is critical, air temp, etc.
For sure an underutilized food source though!

If you don’t hunt I suppose you could take a deer like this and bring it to a commercial butcher but they’d expect you to have gutted it already.
MN also has a venison donation program, the meat goes to food shelves if folks qualify for those resources. It’s under utilized in my opinion.

The Minnesota Department of Natural Resources, in cooperation with the Minnesota Department of Agriculture, has a program that allows Minnesota deer hunters to donate deer carcasses to food shelves and feeding programs. This program provides an excellent source of protein to people in need while helping reduce local deer populations.

Ramsey County thinks of a dead deer as trash and was not helpful. But! I learned that if you call the toll free DNR number, you can reach an on-call conservation officer right away. The CO can then get you a possession tag and the deer is free to become (legal) food. 🥩
