Gave them a good wash, changing the water a couple of times, then did the "float test" - at this stage, beans that float should be discarded.
I was worried that after a few days in the fridge they'd all be no good, but about 40% we're still OK

Easily the most labour-intensive step is getting the beans out of the fruit - did this by hand and bribed the kids to help
