Looks like you let it pull too long (meaning you left it running too long) so you got too much water in the shot at the end. Once you see it start to go that creamy off white color turn it off.
Also try a different coffee, and finer grind, that should help with the taste and intensity.

I totally understand. I found personally the stress and anxiety of knowing and being powerless to stop it was consistently outweighing the anxiety I have from not knowing. That was my sign I was consuming too much.
