First time ever making a version of birria, and I used a chuck roast. Only problem is it’s mid-April in central Texas and idk the next time it’ll be cool enough to consider doing this again. Bet that when it does get cool again (maybe December??) I’ll be doing this like once a week

Our neighborhood fox seemed to walk even closer for its photo after I stopped the car for it to move out of the road.

All this was stacked neatly against my shed but finally decided to move it away from there for snake and termite reasons.
Was it a good idea? 🤷🏻♂️

COTA always goes over the top with the Texas stuff on F1 weekend. I love it! But I always think about other states or provinces trying to pull this off, much less another country. Could you imagine paper Nevadas after the Las Vegas GP?
