I use Serious Eats' carbonara recipe, which, if you follow to the letter, will transport you to a Roman piazza.

Whether it's de rigueur or not, tonight I'm whipping up that old Roman favorite - rigatoni carbonara. My sister and a pal are coming by. Easy peasy makes everyone happy. Also looking forward to a chilled dry martini followed by some wine.
