I’m playing around with these silicon molds for these Asiago-Mustard Tuiles. They are very easy to make and entirely lift up the presentation of a dish.

I just learned this great poached egg hack. Use a bowl with a 2:1 ratio of water to vinegar mixture and let the egg “set” in it. It’s amazing and will gel in about 20 minutes or so. Use a slotted spoon and put it in a pan on a very low boil and it comes out perfect.

I’m 5 days away from my new Hexclad knives that probably won’t matter a whole lot. I know how to chop an onion with cheap knives 😂

I made a arugula pesto with a burrata spinach stuffed chicken breast over garlic cous cous. The second dish I’m sure has died in my gamer son’s room 😂

The only nice thing about a cold snap in the South is that I get to wear my Bourdain coat. (Yeah- I know he wore it better).

Today, tensions increased at the Catastan border as a DMZ was established. However, the tensions were short lived due to eventual lack of interest and napping.
