All the desert components laid out in a neat little row on the edge of the table, which is now covered in a gray rubber cloth. This course is entitled 'Paint'. All of the components now scattered artistically on the table. There's a pumpkin puree, a toasted marshmallow sauce, a chocolate sauce, lots of little crumbles and a few little treats here and there. Yes, we ate it directly from the table. An apple taffy balloon filled with helium. The menu for Alinea including all of the courses and pairings we did that night, except for the white truffle add-on.

Almost done. I swear!
A dark, gelatinous disk of kombu. A clam-shaped glass bowl filled with a clam soup. We were told to drink it directly from the bowl. The kombu veil lifted back to reveal a wagyu short rib, japanese eggplant pickle, and pine nuts.

Strawberry and squab. Tasty and beautiful. The dehydrated endive leaves were even more beautiful in person. Served with the squab course. They're beeswax candy shaped to look like strawberries. White truffle tart brulee before it was covered with white truffle shavings. White truffle hazelnut tart brulee after it was covered in white truffles and hazelnuts. We did not say 'when' with the white truffle shavings. Probably the most expensive pizza we'll ever eat.

The bowl of fire has turned into a bowl of ashes. Food is in there. An archeological digsite that is also food. Bone with a marrow treat. Two slates featuring a shrimp cracker and an empanada covered in crumbs that need to be brushed away. (Tools not pictured) And a couple of chimichurri sauces. The tamale that was in that bowl of fire earlier on a slate. Very tasty. A piece of pasta with black truffle on top, and filled with a black-truffle liquid. They instruct you to eat it with your mouth sealed, and that is a good idea.

'Peanut butter and jelly' The peanut butter is the curly thing. The jelly is the grapes. The salt orb from earlier was used for this dish. Random bowl of fire that was brought to our table. *shrug* It's a surprise component of a future course. 'Charred Char' Arctic char with maple syrup and smoke. This is not a place that's too sophisticated for puns. Hot Potato, Cold Potato. We had to pull the pin to put the hot potato into the cold soup and eat it all quickly. They even had special thingie to put it in place so the body heat wouldn't mess with the temps.

A mysterious cracked orb that was on our table when we arrived. (Spoiler: it was a salt called Asín Tibuok) Caviar dish served in a glittery black plate we were supposed to hold in our hand. The texture of the plate is meant to evoke the texture of the caviar. A 'Chicago style hot dog' that is a tiny gelatinous cube with dots served on a postcard with a picture of a Chicago-style hotdog) Tempura lobster on a vanilla bean. They brought a group of us to the kitchen to stick our hand in a tube and pull it out. Then they mixed a drink for us while we ate it.
