Its a mixture of both Component Families and Profiles with Hosted Sweeps. No In-Place modeling though.

There isnt anything that I know of that show historic modeling like this in Revit from a learning perspective. However there are Youtubers and LinkedIn Learning videos that discuss Family Creation in Revit and Point Clouds. Those might be helpful.
