As far as primary sources go, it's hard to avoid Kuhn's "Structure of Scientific Revolutions," but it should be tempered with some more recent secondary sources - most every contemporary philosopher of science disagrees with Kuhn on a lot. But he's so important.

For a Christian perspective, I like Wolterstorff's "Reason Within the Bounds of Religion"

For a brief introductory textbook, maybe Okasha's "Philosophy of Science: A Very Short Introduction," or Godfrey-Smith's "Theory and Reality" (a bit longer)
