There’s another post with Creamed Pearl Onions in this thread, but this is my mom’s recipe and I can’t imagine Thanksgiving without it.
Creamed Pearl onions •2 pints small pearl onions. (Peel and cut a small cross at stem - it helps them hold together) •Boil onions in chicken stock or water until soft/cooked. •Make slurry with 2-3 T butter and 2-3 T flour in saucepan. (Option: Add Sherry) •Add 2-3 cups whole or 1/2 & 1/2 (could even use skim milk) to slurry. (Can also add stock from boiled onions in addition, to thin sauce if needed, etc) •Heat up to simmer and allow sauce to thicken up. •Add salt 1/2 t or so, fresh ground nutmeg, and pepper to taste. (Add other seasonings too if you like) •Add boiled onions to cream sauce and serve. Optional: Add handful of Chopped parsley to creamed onions before serving.

Home now. I want to thank my nephew for being an excellent host. He spent most of yesterday driving us around (as my mom can’t really walk these days) pointing out all the fun neighborhoods, spots he likes to fish on the Deschutes, places he frequents, works, etc. What a trooper he is. #DogSky

Buttercup (a brown and white standard poodle) between our two hotel beds, mournfully looking up. Won’t someone lift me up she asks. I know I jump over the couch and up onto your big bed at home, but this seems all to much here.
