My lumpy imperfect pies. Dough from scratch. Sauce is puréed tomatoes. And cheese is a pepper jack that melts perfectly and has more zing than mozzarella. Top it off with aged parmesan, tomatoes, and pepperoni. Iron pans get the crust crispy. Oven at 500.
