You mention temperatures without scale. I surmise it is °F, given the inference to the boiling point of water, but as I (and I'm sure others) generally use °C it would reduce the risk of error if it were specified.
Doesn’t plastic wrap melt in the oven?
Q: I’ve seen recipes from chefs that call for covering food with plastic wrap and then foil before putting the food in the oven. Won’t the plastic melt into the food?

I just blocked the Washington Post. That might seem weird, but I just don't like it that every time I click on one of their posts to read the rest of it, I get taken to a paywall. I strongly recommend against using the company OnTrack for shipping. They are the most incompetent shipper I have ever encountered. They can't follow simple instructions, and go out of their way to mis-deliver our packages. HomeChef is just as bad as they won't do anything about it.
