My daughter came over and wanted Mexican so I made cheesy shredded chicken enchilada for dinner with salsa verde marinated chicken.

Dinner the last couple of nights. Sweet and spicy turkey lettuce wraps followed by blackened vegetables. My wife loves the lettuce wraps, but a little upset that the blackened vegetables didn’t come with any meat. Still trying get her to understand it’s okay to go vegan once in a while.

My daughter and granddaughter came down from Vermont and wanted me to cook, so I made teriyaki chicken with steamed broccoli to satisfy her. Tonight she wants flat bread pizza.

I made cinnamon pancakes with bacon for dinner just to make my wife’s day.

Dinner tonight was pan-fried chicken, zucchini, and squash for dinner. Something quick and easy that I know my wife would enjoy.
