The secret ingredient to thickening up my creamy sauce is MUSTARD. Mustard is an emulsifier and it keeps from having to add flour to all my sauces. This is a great trick not only for sauces but for creamed spinach and bases for pasta. Try it!

Stuffed sous vide chicken caprese

Chicken caprese stuffed with mozzarella. Once chicken is almost done, put cheese and tomatoes on the top and put it in the broiler until the cheese is melted, and the tomatoes are beautiful. Top with basil, drizzle olive oil and balsamic.

Pasta with leftover rib meat. I have so many thoughts on this including mustard in the sauce. (was also used as the binder) Definitely will do this again.

Salads don't have to be boring! This is my healthier "smoked Cobb" salad with 🥑, 🍅, 🥚, smoked chicken, and jicama. Make your own dressing in a jar. 👩‍🍳
Start with a dijon base (mustard is an emulsifier - it'll help keep your dressing together) add some pepper, olive oil, balsamic.

Healthier chicken cordon bleu, but I am using a sous vide turkey breast instead. The base is a flour free mixture that I call it my no roux roux because it’s perfect if you’re gluten-free / celiac because it has no flour. Then I just add some ham and thinly sliced Swiss. Chives for garnish.

True story. Went to this restaurant in Big Bear that’s known for their stroganoff. I showed the server a picture of mine for no other reason than small talk and something you don’t normally see on the menu.
Her: You made that?
Me: Yes
Her: Don’t order ours

This is brown rice pasta. Healthier on the glycemic index and digestion. The trick is to par cook super al dente. Very basic but very good. #pasta

There’s a few tricks to the perfect duck breast. Only crosshatch the skin (not the meat) - this prevents curling and allows for more even cooking and browning. Render fat in a cold pan. Then sous vide and then sear the crisp out of it. Reduce fig jam and wine for the perfect glaze. #sousvidecooking

If you’ve never sous vide before, I will tell you, it is a game changer and don’t underestimate it. You can always put it on your smoker after it’s done, but this is the power of precision cooking…two different sizes of protein perfectly cooked. #howtosousvide
