I've tried her other cremeux recipe from the book which had full cream milk and only 3 yolks, currently in the fridge. Interested to see if it works.

Yeah there was something off with the taste too. It's an Emelia Jackson book which I've used very successfully before so I wonder if there is an error here. Even elsewhere in the same book the cremeux has dairy in it.
