I’m not sure, I think the peach juice would be fine in a G&T. When I did the pineapple juice version, there was a hint of pineapple flavour, but mostly tonic. Colouring the fruit would be interesting! Maybe a teaspoon of bramble or raspberry juice would make the fruit pieces go purple?
