That's the thing, peasants could start their work at sunrise at the earliest, and would probably finish it around midday. However, they'd still need to watch their fields through the afternoon for pests and other unwanted visitors, plus they had literally nothing to do once finishing their work.

Well, you'd be correct. Peasants in the middle ages did far more work than we do. Do you know how much work it'd take to tend a field with no modern tech? How much work animal-care is with only the most basic of tools available? Most peasants spent day in and out working, and did nothing else.
