The main reason would be if you had aged hardware that required a floppy disk to work, like certain old Yamaha keyboards, Super Nintendo piracy hardware, old industrial equipment etc.
Rather than finding new floppy disks and drives, it could be cheaper and easier to use an adapter like this:

There was a market for such a thing, 20 years ago. It has already been invented, sold, discontinued and now available on eBay.
You can have one that goes in your floppy drive and emulates a floppy disk (like the old tape adaptors), or you can have one that emulates the floppy drive entirely.
