You sure can! "Adult" spinach (i.e., curly and not baby) is quite substitutable with kale in most cases. One exception would be if you want to make kale chips--then the frilly standard kale (not dinosaur/Tuscan) works best because it has plenty of crenellations where seasonings can stick.
