Madhouse at the End of the Earth talks about eating penguins quite a bit. It doesn't sound tasty.
Longing for something fresh, fibrous, and toothsome, several of the men resolved to try the penguin meat they had been stockpiling. They thawed out the penguin steaks that Racovitza had carved out and entrusted them to Michotte. They weren’t the first explorers to try penguin meat, but reviews by previous adventurers were decidedly mixed. In Tierra del Fuego in the late sixteenth century, Francis Drake and his men gorged on Magellanic penguin, which they considered “a very good and wholesome victual.” James Clark Ross tasted emperor penguin in 1841 during his expedition to Victoria Land. “The flesh is very dark,” he reported, “and of a rank fishy flavour.” Penguin was not added to the menu. In Michotte’s inexpert hands, the meat was perhaps even more offensive. It tasted somehow like both fish and fowl, with a gamey tang. “If it is possible to imagine a piece of beef, an odoriferous codfish, and a canvas-back duck, roasted in a pot, with blood and cod-liver oil for sauce,” Cook wrote, “the illustration will be complete.” For a full impression, one must also imagine the tenacious reek of guano that clung to the birds. Most of the Belgica’s men vowed that their first morsel of penguin would be their last. De Gerlache, who according to Cook felt insulted that his men would even consider eating such a repugnant meat as an alternative to the canned food he had so carefully picked out, refused to touch it. Danco, the commandant’s loyal friend, said he’d rather die than eat it.
