All that changed because the corps who own the chains decided to pay less and less for ingredients and labor and funnel more of the revenue to dudes in suits who haven't flipped a burger in their life, so of course it went downhill.

Its kind of amazing how it somehow works in the original films, but then doesn't really work as well in the newer ones.
