For as cliché as doing the donut tutorial is, it does actually give you modeling, texturing, shading, geometry nodes... It covers everything you need.

Switch to sculpt mode and use the slide relax brush to smooth out your edge loops so they're a little less jagged. - no topology change but it will look prettier

Overall, looking decent, it's better than you think.

Prioritize having the top and bottoms of openings (mouth and eyes) symmetric - same number and spacing of verts. You want them to match in pairs when the eyelids close. If they're mismatched you'll end up with cracks and misalignment

The 5p between the eye and mouth loops could move a little further outward toward the corner of the eye.

It's a little on the dense side.

Personally I think I would like to see that mass and weight of the dragon show through... to see the wings having to fight the air to slow the body down.

When just one wingbeat to stop is enough, it conveys a feeling that the dragon's body is very light. (Perhaps that's canon in your universe?)

Perhaps look to something like bald eagle footage for reference. There are a lot of people who shoot lots of good, slow motion footage of them.

They're big, HEAVY birds which means they take a while to get up to speed, and to slow down when they want to land.
