I recently made a knife for NOMA’s head chef, who found a gap between his most used blades. Pettys too small for detailed chopping & slicers uncomfortably long during service. I designed this knife to fill that gap: scoring squid, thin slicing of preserved fruits or carving and slicing duck breast.
