There are exceptions. Destiny 2 uses some anticheat stuff that won't run through proton, so you can't (?) play it on a steam deck. There's an add-on that displays SteamOS comparability on the steam page so you know the proton status for each game before you buy.

No, well sometimes yes, but not really - they run through a thing called proton which turns ... Let me skip that explanation and just say this: it makes Windows games run on Linux.

SteamOS is a customised Linux thingy. You can access the full desktop mode to perform fuckery if you wish, but by default it just looks like steam big picture, i.e. a console interface with big clicky tiles.

Short answer is this: huge amount of the "windows" games on steam Just Work on steamos. Some require some fuckery. If you enjoy fuckery that you can get the steam deck to do silly ridiculous things. Suspect the same will be true of the steam machine.
